What Should Culinary Students Know About A Garde Manger?

By Jennifer Marie Anderson

For those who do not know, a garde manger may be an area where a chef finds him or herself spending time in. This is an area in which cooler foods are prepared, meaning that there isn't going to be much in the way of heat to consider. Nonetheless, there is still a level of care to be seen, as you can probably imagine. However, in order to understand what garde manger chefs must be responsible for, here are a few talking points to take into account.

In this day and age, it's easy to see that the garde manger is seen as an entry level position into cooking careers. These are the areas in which salads and other small platters can be created without much experience, meaning that it is great for those who are simply trying to get their feet wet. With that said, though, being a garde manger chef can actually prove to be quite intricate as time goes on. You may be curious as to what exactly this means.

As you start to expand your skills more so, maybe you'll start to learn more about re-purposing. I'm sure that you have done this before, such as using leftover meat in order to create some kind of soup or stew for the night after. It's an invaluable skill and one that, believe it or not, can be applied to the responsibilities a garde manger chef will have. While this idea will be tied into cooler meals, which goes without saying, it's one that helps to make a number of jobs easier.

Let's say that you are responsible for preparing a cake; more specifically, the decorations associated with the cake in question. With several layers to take into account, it wouldn't be out of the question for a garde manger chef to utilize decorative elements along the lines of flowers made of icing. What about appetizers, at social events, like cheese platters? These foods are chosen with a sense of quality intact, which ultimately results in better products overall.

As you can see, working within a garde manager takes quite a bit of responsibility. There are various duties that must be taken into consideration, some of them undeniably more important than others. Focus on all of these, for the future, and you'll start to see why a job like this is the perfect entry for budding culinary specialists. If you like it enough, who's to say that you cannot spend more time crafting your skills in this particular realm?
